Here we are putting up some more strawberry jam. We start with some beautiful strawberrys, about 5 cups.

and they are now stemmed and cleaned, ready to be pureed.

Lets measure out 7 cups of sugar, 1 pack of sure gel, and get the jars boiling in the water batch canner

The suregel goes in while the pureed strawberrys are cold, but put it in slowly and keep stirring.
Bring to a boil that cannot be stirred down, and then add the sugar slowly and keep stirring! Bring back to boil, and 1 to 2 minutes longer after full boil, and look at spoon and note the drops hanging on the spoon, now you can be sure it will set and you will have strawberry jam instead of strawberry syrup!
Take off of the heat and let it set for a minute to let the foam rise. And then skim off the foam.

Lets get those lids boiling, so the seals will be soft, and kill bugs. Take a jar out of the boiler and get ready to fill

It is important to wipe the rims of the filled jars so that no product will contaminate and prevent a good seal

Then the lids are plucked from the boiling water pan with the magnetic "plucker" and carefully put on and the rings tightened

Back in the waterbath canner they go for 10 more minutes after they come to a roiling boil
And here is the finished result a total of 9 half pints and one little baby 1/4 pint

I hope you enjoyed this little canning journey. I know I am going to enjoy the results!
