Here we are putting up some more strawberry jam. We start with some beautiful strawberrys, about 5 cups. IMG_20140719_135952_944.jpg

Lets measure out 7 cups of sugar, 1 pack of sure gel, and get the jars boiling in the water batch cannerIMG_20140719_141127_964.jpgIMG_20140719_141450_905.jpg
The suregel goes in while the pureed strawberrys are cold, but put it in slowly and keep stirring.IMG_20140719_142148_785.jpg
Bring to a boil that cannot be stirred down, and then add the sugar slowly and keep stirring! Bring back to boil, and 1 to 2 minutes longer after full boil, and look at spoon and note the drops hanging on the spoon, now you can be sure it will set and you will have strawberry jam instead of strawberry syrup!IMG_20140719_144053_018.jpg

Lets get those lids boiling, so the seals will be soft, and kill bugs. Take a jar out of the boiler and get ready to fillIMG_20140719_144705_793.jpgIMG_20140719_144602_546.jpgIMG_20140719_144721_194.jpg

It is important to wipe the rims of the filled jars so that no product will contaminate and prevent a good sealIMG_20140719_144807_974.jpgIMG_20140719_144954_664.jpg

Then the lids are plucked from the boiling water pan with the magnetic "plucker" and carefully put on and the rings tightenedIMG_20140719_145008_316.jpgIMG_20140719_145020_324.jpg

Back in the waterbath canner they go for 10 more minutes after they come to a roiling boilIMG_20140719_150119_537.jpg

Nicely done! Nothing better than a wife that has a passion for canning.

The great thing about accidentally makes strawberry syrup instead of jam is you just whip up a batch of flap jacks. :licking:

Or break out the vanilla ice cream!:D

While the wife was the brains of the operation, I helped every step of the way, from the stemming to the constant stirring to the lid applying.:) So I get my share!:laughing:

She is definitely the brains of the canning outfit.. I am still learning, and I get the "all brawn and no brains jobs":laughing:
