Starting the brisket

My brisket is going on late tonight, for an overnight smoke. Yesterday I smoked salmon for smoked fish spread, and tonight will be good 'ole burgers and brats.

Put the brisket on the pit 2am this morning, should be done about 2pm. Then I'll put some St. Louis cut Ribs on after that. Looking forward to some good Q.

I just use a standard mac 'n cheese recipe, but instead of baking in the oven, I put it in a smoker at 225-250, uncovered, for about 2 hours. This year I'm using Alton Brown's recipe. This afternoon, I'll wrap the brisket in foil, move it to the lower rack, and put the mac 'n cheese on the top rack.

Had beef ribs, deer wraps (cream cheese filled jalapenos wrapped in deer meat wrapped in bacon and thrown on the grill), award winning pinto beans and nanner puddin for dessert. I hurt myself.
