We decided to smoke a chicken while we were working outside today. Put it in at 10am, out at 3pm. So moist and tender, just fell off the bone. Had some carrots and onions in with it, corn on the cob also done in the smoker. Used applewood chips. Mmmmm, mmmm, mmmm.

That looks like one tasty yard bird. What temp and did you cover the pan?

Kept it open on top, bird in the pan breast side down. Whole stick of butter melted down with 1/4 cup of honey, poured over bird. Baste about every 2 hours. Temp varied a little, but basically at 300°, never went higher than 310°, no lower than 285°. Corn was cleaned, wrapped in foil with a couple of pats of butter and sprinkled with onion salt and pepper. Corn was only in for the last 1 1/2 hours.

Thanks, I have never tried smoking the meat in a pan, makes sense it being cook in it's own juice would help keep it from drying out.

Smoked 2 meatloaves yesterday for the first time ever. Was superb. Low n slow at 225 then upped to 275 after about an hour and a half. Glazed with marmalade mixed with bbq sauce the last 20 minutes or so.

That sounds really good too! I'll have to try it.
