I'd guess this method makes a lot lighter "footprint" (literally and figuratively) than any vehicular moving method would also.
It's quite amazing what you can do if you throw the appropriate manpower at a problem. The amish seem to do it quite well a fair bit for barn raisings, barn moving & other similar things. Of course when your religion prevents you from using modern machinery you have to stick with oldschool methods or get creative in different ways.

The Amish are amazing people. My wife worked with them (sold their products in her store in Virginia). She was one of few "English" who was invited into their home. The ones she worked with are shrewd business people in that they know the value of their merchandise and will not compromise on quality to meet a mass market price but understood the need for my wife to make a profit. Honest as the day is long and just as hardworking. They know the bounds of their religion and work right up to the edge. For example, they cannot drive a motor vehicle but they can hire someone to drive them to and from to do business. I've seen them running a motorized thresher in their fields - pulled by a team of horses.

So I looked at the suburban picture again, appears to only be 4 or possibly 5 pallets on it. Not sure where people are getting 7.

Its definitely tongue heavy, and appears to not have safety chains hooked up. Everything else I've heard is conjecture based on a slightly blurry photo from a distance.

Now if the trailer and truck had farm use tags, a SMV sign and didnt travel over a certain speed (usually 25mph) it would be legal to operate in many rural areas on non-highways.

Is this an optimal load/setup? Nope.
Is it illegal and bound to kill someone? Don't know, not enough info provided to say.

Also, I don't think the cord was plugged in, so no lights or brakes. A half mile in the direction he was coming from the road tee'd into a US highway, and a half mile in the direction he was going the road turned into a back country road (likely 55 mph). It was in the middle of nowhere, so he had low population density on his side. The town where I saw this was small and unincorporated. I only saw him go slow through town.

I've had interactions with the Amish as well. The ones I've dealt with didn't drive cars, but had a skidloader. They had a woodworking shop that had a diesel engine running a hydro pump. All their tools ran off hydraulic motors from that pump. They also had telephones that they could make and receive calls. Each community seems to have some different rules. I had another group of Amish put a new roof on my barn. They had a telehandler, but hired someone to drive the crew around in a van and pull an enclosed trailer between jobsites. It seemed like the man running the outfit had a cell phone, because he would always answer and on the first few rings. If he did have a cell phone I'm sure it was for business purposes only.

I think Indiana Amish have been relaxing their rules as of late, I see many more on cell phones at the mall, and at doc offices than I used to

We don't have Amish here, but there are several Mennonite communities in the area.
