The skating rink is a great idea! You might be able to take and put 4x4's all the way around it, put a rubber (or other type of membrane - maybe from a rubber roof?) in there, fill it up and let her freeze...

As for any future ideas for its use other than grand children, You could put pavers inside it leaving a circular area in the middle for a fire pit, a couple of large planters for small shade trees and concrete benches ,large arbor etc.
