Update;
So I got it fixed. It turns out the fuel pump was fine.
The problem was with the fuel hose connections to and from the fuel filter housing. The elbows are pressed into the housing and one of the connections wasn't tight at all. When I held the filter housing on its side, the elbow would just fall out. What would happen was that the fuel pump would pull in air when the fuel level was low enough and I was driving at an incline with the fuel tank at the lower side (uphill). When this happens the gravity feed isn't enough anymore and the pump is actually pulling in fuel. Well, the air leak would have it pull in air and as such it would stall constantly.
I JB welded the elbows back into the housing so it's nice and airtight now. Just did a test run today with the fuel tank almost empty and drove it on the same road where it would stall before (with even more fuel in it). IT was all good now, not a single hiccup.
