LT and NHS chain sizing

Will a chain for a 27x8.5x15LT fit a 27x8.5x15NHS tire? I would assume the tire dimensions should be pretty similar.

I would think so. Tire chains are usually sized generously enough to avoid not fitting published sizes. It gets ugly when they don't.
