How are they going to bring plates? The court house won’t give you plates until you register the title.
They come to the house, they pay me. We make out hand written reciepts and I sign the title over. They take the title and go do whatever they need to do and they come back for the car. It is either that of they have it towed. Either way before they leave I scrape off my registration sticker and take my plates off. I've bought and sole several cars through private sale here and this is how it has always been done.

Here, if someone wants to drive away with a car in a private sale they need to bring plates to put on the car. Rarely do the plates get transferred. Even in cases where the plates are transferred the new owner must have proof of insurance before the car can be transfered into their name. There is no way on earth that I would let someone drive away in a vehicle that was still registered to me and under my insurance. I wouldn't even do this if they were a relative or my most trusted friend, not that I do business with friends and relatives, but you get the point.
We have 24hr to 45 day temp plates you can get. The 24hr ones are for transport home and can be had before the sale, the others you need to show a bill of sale (at least) and transfer it into your name to obtain.

In Indiana you can get 24hr 'transfer' plates ahead of time. It's how I drove an RV the 3hr trip home.

We have only sold a few cars over the years.
There's a large cemetery about 1.5mile away with lots of paved roads going around and through it. People interested in car I drive them there then let them drive around cemetery trying it out. If they buy it we meet at a local bank where money is transferred, no warranty paper and title is signed, I remove my tags, and call my insurance company cancelling insurance.
Now it's their car and responsibility.

there is no way I am paying 10,000 dollars for something and leaving it in someones yard so they can make it disappear. I know the odds of finding a crooked seller are probably less likely than a crooked buyer but I paid 13,000 cash for one of my tractors. the other one came from a dealer so that was a bank transfer.

i've lived all over this great nation ( not NY) and in every state i lived in, both the signatures had to be witnessed by a notary.

I always try to do it a dmv.

I've been pulled over a lot over the years in many different jurisdictions. Mostly due to my lead foot. I cannot imagine a traffic stop scenario where an officer sees my cash, much less has cause to search my vehicle. Ok, maybe DUI/DWI , but if you are doing that, you have bigger issues than worrying about cash being confiscated by a cop. In the highly unlikely event of an illegal seizure of my cash, I would get more in settlement from the state than I would have lost. Remember, there is no law against carrying cash...unless you are crossing national borders.
