G'day by all means modify the clutch we would do two or three clutch replacements a year due solely to clutch levers (usually pto ) being left in the disengaged position, the latch is there for if you store over the winter that you can latch the clutch off so it doesn't freeze to the flywheel

It's also there for people who still have hand cranks. Always lock it in and lock the brakes before cranking.

I used to race sports cars with a fellow who was missing his left leg. He had a hand operated lever attached to the shift lever that operated a hydralic cylinder that released the clutch when he depressed it. You may be able to rig something like that up.
