what would cause my choke to push automatically while I'm driving? It starts to cut out until I hold it in and runs fine.

It could be a cable adjustment but it's probably more likely a spring became disconnected, broke, or with age became too weak to do its job.

The Ford 850 choke naturally rests in the pushed position. It is pulled to engage and will go back in on its own when you let go, by spring pressure.
