It's usually what I do with the shoulders...

I just use Lea & Perrins, garlic powder, course black pepper and sea salt...I smoke mine and slow dry it in an oven rather than use liquid smoke and a dehydrator...

Personally I think beef makes much better tasting jerky (because of the fat)...and for the same reason it takes longer to dry out to the right texture...venison drys much faster...

I've had some venison jerky. Its a little stronger tasting than the moose or beef jerky. The caribou jerky the Inuit made was so hard(dry) I would break it into chunks between two rocks. It was good but it lasted like you were chewing on a chunk of wood. All they used was birch/aspen wood smoke and salt.

We use dales steak seasoning for marinade, them creole and black pepper sprinkled on after
