Trying to slowly add missing options to my 3320 tractor. This far Ive been working on filling blanks in the operators area with their respective features. However there are 3 open plugs in the outside rear of the tractor right below the glass of the cab. Two are right in the center, and the third is closer to the left fender. Does anyone know what options these cables go to?

By "Cables" assume you mean electrical plugs.
Could be for trailer lights, working lights, etc.
Use a tester to find out when these plugs have 12v by turning ignition, lights, or other obvious switches on/off.
I used one for a work light to the rear.

Without knowing (or a picture) of what type of plugs you're referring to we're really just guessing blind. I also used an existing two, separate, bullet-type (male/female) plug set to wire up a work light on the ROPS of my 4105... it was hard-wired (existing) to my light-switch.
If it were me, I'd take a photo or two of what you have and take it to your/a JD Dealership. Talk to the Service Dept. or one of the mechanics, it's what I did to discover that pre-existing work-light plug. My Dealership was simply happy to help.

On my 2008 3320 open station there were two cables that I used for work lights, they had bullet connectors with if I remember right black and purple wires. I think the later tractors also had a connector for the air suspension seat, mine didn't and I had to run the wiring to the fuse box.
