Can anyone tell me which wire color goes to which switch? This is the right side control handle. I am trying to diagnose a no power issue to my grapple controls.

Orange wire would be volts into handle. Power comes from the controller after you push the AUX button in upper left panel. Make sure the Aux indicator light comes on. Trouble shooting the handle is done easier at the harness plug connection under the seat where the handle harness comes out of the steering lever.

judging by the epoxied wires, it looks like you'd have to replace the handle if a problem developed there, because it's all epoxied!.

Correct. The thumb switch side of the rheostat can be removed and possibly replaced but if thumb movable side is worn the fixed side is also and new switch won't last long. Dealer techs just check for power in at the harness plug and if correct volts present just replace complete handle.

Would the correct voltage coming in be 12-14 volts? The solenoids for the auxiliary hydraulics are 10 volts.

The current production machines are 5 volt at the handle but I don't recall exactly when Bobcat changed, if it was at introduction of G-series or later when ACS & ISO control options came out. It is either 12+ (battery voltage) or 5 volt.
