This years king tato came in at 10.5 pounds. had a lot in the 4 to 9 pound range, plus the usual smaller ones. Had to dig them with the skidloader due to the hard ground.

That's a keeper! I haven't dug mine yet.

Never bothered to weigh ours, but we typically have some big ones. Cure them for couple weeks in the greenhouse on wire racks under a tarp at 85-95 degrees, then store on wire racks in the basement for the winter. We grow Covington variety after having tried several others in the past, find this one is the one we like best.

We don't wait for any certain time to have sweet potatoes or anything we grow,--When the urge comes up, just do it! lol!! I like Andy's racks!-- That is the only good way to store veggies! Keeps them from mashing the ones under them, PLUS you can spot bad ones before they damage others!
We needed to dig before voles/mice got real bad in them.--they did damage a few, but no great amount this year. ---Also wanted to get them before frost hit and ground temps dropped. If they been planted for 90-100 days, it's time to dig as they are done growing anyway.

I actually like a sweet potato simply baked. Does not need anything on it, good as is.

You have them confused with another veggie!---they are simply "sweet potatoes" ---- also they are NOT yams either!--a lot of people confuse these!

I'm impressed with the harvasts. And I thought the Puerto Rican Pink I grew that weighed 3 lbs was a big one! Also, I have root cellar envy. I've always wanted one. They are not common in my neck of the woods.

Handy if you have a hillside to burrow into for a root cellar....but you can build up a mound of dirt to make it. I have a mountain that rises almost 1000' from the lower part of my place to the top. My house is built into it, with the garage having 7' of dirt/shale against the upper side of it. I dug out a hole with excavator, then cut a hole in block wall into the hole.

Poured by hand a small footer, then laid 8" block to make an 8x10' room.

Put a temporary roof of 2x lumber, then had the roof poured 6" thick.

Put 2" foam board on top the concrete, then backfilled with couple feet of dirt. Couple coats of paint, shelving and lights to finish off the inside. Also put some 6" Pvc tubes for outside air. One has a small 'duct booster' fan on a timer to draw colder night air in starting in the fall.
