For those that asked about the recipe for Southwestern Shepherd's pie...I asked the chef (my wife) since all I do is eat it. Pretty simple, real good on a cold day, and different from regular shepherd's pie...
Myla's Southwestern Shepherd's Pie
1. Brown 1 lb meat (she used ground turkey, but previously used ground beef...she doesn't like lamb - I know Eric's flock will be glad to hear that). Add some cumin and chili powder, or Mesquite seasoning.
2. Drain and add 1 can of Tri-mix beans (black, pinto, kidney)
3. Add 1 can or half bag of frozen corn
4. Add 1 16 oz jar of green chile sauce (this is the magic...we haven't been able to beat the flavor of Hatch Valley sauce that we've ordered from 505 Southwestern in Albuquerque, but they've been bought out and shipping cost is sky high now...I guess my job will be to make up my own batch).
5. Blend and simmer for about 10 min.
6. Put above into glass casserole dish
7. Top with mashed potatoes
8. Top with grated Mexican cheese blend
9. Bake at 350 degrees until bubbly and cheese melts
10. Thank the lord and the chef. Eat too much and enjoy.
