Take lots of close up pictures, esp once they start wiring and plumbing.

So far I am very happy with the framer. He talks to us and suggests things that we have not thought about. Everything is level and straight. Since he also does the finish work I guess he's making his job easier later on.

Are you planning on doing any type of "super" insulation? It's prolly a good bet you'll have some decent winds there that will highly affect normal f/g insulation's performance without some meticulously installed housewrap and air sealing.
Looking good & moving right along.

Forgive my lack of the proper terms on insulation. The outer 2"-3" will be spray in foam then the rest (6" walls) will be the blown in insulation. The builder said it will be well insulated and quite. The crawl space will also be insulated. (walls) It will be a heated space to keep the floors of the house warm. Although when the fire place is burning no heat down in the crawl because the furnace would not turn on.

 It can be hard to spend the bucks on insulation, but (especially in your retirement home) it's well worth it year round and you should be very happy with that insulation "pkg" you described.
From the looks of your pics I gotta ask, how far a drive is it to some woods for your fireplace?:D

I could be cutting wood 20-25 minutes from my house. By contrast it was 2 hours when I lived in Utah.

Spray insulation is a very good way to go

This is huge, take the pictures and label them with room names ASAP, otherwise they may all look the same. My first digital camera was bought for when our house was being built. Being able to go back to those files paid for that camera multiple times over. It's great to pull up a room wall and be sure there are no water pipes you'll accidentally cut into, pull up where exactly the radiant heat pipes terminate in the ceiling or see where an electrical cable goes to.

The progress is looking good.
