I like to refer to as "the meat that grows on a bush"...anyone got any tasty recipes?

My fav is sliced thin dusted in seasoned floured and fried in butter until the outside is crisp...

Also like it as a casserole with sausage...

anyone ever tried "Mock Oysters"...?

I love it...but Sharn Jean doesn't, and if I don't insist, we never have it. I like it fixed the same way you do...fried...and I like it hot. It loses a lot when it gets cold.

Slice medium-thin, slather with olive oil, season with salt and pepper, and throw it on the grill. Yum.

Interesting timing for this thread. I like eggplant; wife doesn't care much for it. She will eat a little battered and fried as others have said. But Wyatt's Cafeterias in the Dallas area used to (maybe still do) have an eggplant casserole (Baked Eggplant) that I always liked. So last Saturday, I bought some eggplant at the Farmer's Market, found what is supposed to be Wyatt's recipe on the Internet and I tried it. It wasn't bad, but it was too dry; not as good as Wyatt's, but I'm sure it was my fault for getting some quantities off a bit. And it's too many things to buy for such small quantities of each.

I think I might have been snatched as a baby from the deep south. I like fried eggplant, fried parsnips, rutabagas, turnips and kohlrabi. Folks around these parts look at me as if I were from Mars, when I ask for any of the five veggies I've listed at the local grocery store. Fortunately - there is a Louisiana coonass living down the road - fried catfish and fried parsnips and, maybe, a touch of the lightning.


Who were my heroes - Carl Sagan, Justin Wilson & Mr Rogers.

Well, I might have believed you if you had said that you liked fried okra...but I have to admit, some of the best eatin' ever was a mess of fried...fresh caught Mississippi River catfish!

Eggplant - fried as well. Have had it in a casserole and liked that as well.

Used to hate but now I like it pan fried in olive oil, absorbs the oil but gives it back up when cooked, served with a homemade mayonnaise infused with cumin.
Also baked in the oven and flesh removed for the wonderful middle eastern dip babaghanoush (and all it's spelling variants), served with Turkish bread and a couple of other dips, nice outdoor summer eating with a glass of something nice (your call).

Eggplant does tend to absorb whatever it's being cooked in...one reason it's not recommended to deep fry like so many other vegetables etc...
Also why I like using just enough butter to get it browned on the outside...
it makes great finger food/appetizers and it does not make any mess in the pan...!

I made this also, and while it was tasty, it calls for way too much bread crumbs. (dry) I think the recipe has a typo, it calls for a half pound which seems way high. I'd say half a cup. A half pound is likely almost 4 cups!

I'm posting another eggplant recipe in this forum, give it a look, she's a winner!

My wife makes what she calls eggplant lasagna, using sliced eggplant and zucchini in place of pasta. I like it a lot!

2Lane - - gotta admit - never had fried okra. I'll bet there are very few around this area that ever have and I got a good idea what its going to taste like if some of these local yokels try fixing it. You ever met a man that could screw up on boiling water - well, I have and he is just a plain 'ol local bloke.
