That is a good way of looking at it although not all the jars are quarts.

Tonight we used 5 jars for supper alone. 1 quart of the previously pictured mulligan :licking: thinned with a half pint jars of homemade chicken broth, quart of apple sauce :licking:, quart of tomato juice :licking:, and all topped of with apple crisp made with a quart of homemade apple pie filling. :licking::licking:

I forgot to mention that I had 400 jars prior.

My plan is to have a one year reserve as well.

Hmmm - canning garden products eh?:D

Absolutely, orchard produce too the kids love grape juice and apple juice.

DUFFSTER I understand what you're saying. Besides, having surpluss jars allows one to vary what they plant because you don't need to can every item each year. Our canned salmon has lasted several years. We have plenty of pickled beets for another year. The corn and zuchinni relishes are good for a few more years.

Besides, the pantry just looks better having goods in it year round.:licking:

Our canned salmon has lasted several years.

The last time we canned salmon ourselves was 1990. And we used the last of it in 1995 or 1996.

Neither would canned dill pickles like a friend of mines Mother used to make!:D

Oh, my gosh. I went out to check on the garden this afternoon. Well, now I'm picking green beans! I've got to say this is the best looking garden I've had in several years. If all those tomatoes produce I may need those 700 jars!:licking:

I also picked some banana peppers and bell peppers and not a surprise, pulled some green onions. My spinach is almost ready for cutting number 2.

I guess the fish emulsion helped and the eggs under the tomato plants. If I don't have blossom end rot I will know the eggs helped.

I'm still in shock, was going to take off next week for a bit as I'm buying a newer motorhome, now I can't I'm sure. I am so conflicted!:confused:

I picked a water bucket full and there is more. Going to break them tonight and cooke them tomorrow, looks like I'm picking more tomorrow and canning. I'm not ready yet.:shocked: Also bell peppers and banana peppers. Going to cut bibb lettuce in the morning and dust my cabbages again this evening.

Then I quit, bath and dinner out.

Anyone have recomendations for canning peas? It's been too long since I have done it and don't remember how.:( I do remember that we used to water bath though.

All I can remember about canning peas was that one had to very careful or they could go bad.:confused:

The only peas we canned were blackeyed peas and we used the pressure cooker.

Yep! A producing garden can take over your life and all your spare time. . . but it never leaves a bad taste in your mouth.:D

Now you have me very envious. It was snowing yesterday morning at our place. I have yet to till the garden and plant the cold weather crops.

We save time and water in our gardening by placing a couple of layers of newspaper between the rows and covering the papwer with a couple of inches of grass clippings. This prevents the weeds from growing and doubles as a mulch to decrease the waterings. Just till in the newspaper and clippings in the fall as it will add to your soil. If you do this, you only need to weed between the plants.

My grandma told me that back in the depression someone from the bank came to their house to foreclose on it. They looked around, saw everything was neat and clean, and saw my grandma's 600 something quarts of food she had canned. Apparently she shared some of them with the person from the bank and no foreclosure action was taken. I wonder if it was the peaches or peach brandy? :laughing:

For peas I don't think a water bath canner will give you a high enough temperature to kill the bacteria that could be present. You should use a pressure canner.

Do yourself a favor and go get a good book on home canning. The Ball Blue Book is a pretty good book and can be found at most book stores, libraries or on-line. Cheap, too at about $15.00.

Unless it is pickled or really sweet, you need to pressure can.

Canned 28, 1 broke, haven't got the last 7 out of the pressure cooker yet in this picture.

So 27 today, 7 in the pantry, 6 more would make it 40, that's enough for a year.

I hope that the tomatoes produce enough for juice, canned tomatoes, and spaghetti sauce. I've never made sauce to can before. I would like to have 30 cans of tomatoes, 30 of juice and 10 to 20 of sauce, we shall see.

I'm also seeing canned seasoned beef, veggie soup, goulash and other items, I may just do that this year. If Sue Anne and I do much traveling would be nice to just heat some of this up instead of cooking it.

Did the jar break in the canner or after you took it out?

We recently butchered another beef so I canned 30 pints of beef and 38 pints of beef bone broth.

Going to can some rhubarb tomorrow.
