Cause it does.

Water cools much better than antifreeze, it also does not work in the thermosyphan system the same when there is higher coolant ratio.

As I have just learned, the thermosyphan system is MUCH more finicky than a water pump. It likes WATER, everything needs to be VERY clean, and numerous small details can make it run hotter. Add a water pump if you have a Yanmar tractor and do not want to worry about it!
