In a related question to my "What do you prefer to cook on?" thread, what kind of pan do you prefer to cook in?

I am a big fan of cast iron, we have 2 cast iron frying pans, a cast iron deep frying pan (a "chicken frier") and a dutch oven. I like it over anything else I have tried because it spreads the heat well, I can use a metal flipper and it is easier to clean than most other types of pans.

I have a 10" Lodge cast iron skillet. It's the newer type with the textured surface in the cooking area. It's a great pan and almost as non-stick as the teflon types for most things. High heat cooking will destroy teflon-type pans quickly. So the cast iron has a big advantage when searing is needed.

I bake crusty bread in a cast iron dutch oven at 475*. Those things are indestructible.

With a little care of cast iron pans, your grandkids will be cooking with them.
Dave.

The kitchen!

I like a Wok and I like a griddle. A few sauce pans. And a steamer.

Although a good rub on a chicken in the George Foreman rotisserie is hard to beat. No pots or pans required!

My favorite is a Big Green Egg. It's great for everything from smoking, baking and grilling and it's the only way to really heat up a wok. We've done pulled pork butt, prime rib, bread, pizza, steak and of course burgers and since you use lump charcoal you get a true wood fire flavor. MY mouth waters just thinking about it!!!! I highly recommend.

Our house is all electric; I do not like cast iron on the slow responding electirc burners. On a gas stove, I liek cast iron.

My favorite though, is campfire cooking with a camp Dutch oven. I have made all kinds of amazing main dishes and desserts on the campfire.

Hahaha! I read the thread title and my first thought was definitely a shirt for frying bacon!

I love the even heat of cast iron for a lot of things, but since my haemochromatosis diagnosis the wife(not a wife, or that wife, but THE wife) has packed up my dutch ovens and pan.

I have a heavy stainless pan that works nicely that, along with a saucepan, does 80% of the work.

As for camping, I'm a minimalist and everything goes on a stake or directly on the coals. Dutch ovens are wonderful but I'm not going to hump one!

We are all electric, but on our cook top, 2 of the burners are induction burners, even more responsive than gas and will boil water faster than anything out there. The catch is that the pans have to be ferrous metal (magnetic), otherwise they won't work. We had lots of aluminum pans and they won't work on the induction burners, but cast iron will work great, including those dutch ovens.

Depends on what I am cooking. :D

I have some good quality stainless steel cookware.

We also have a few cast iron pieces as well. The cast iron is good for pancakes and french toast which just tastes better when cooked in cast iron. I have been cooking pancakes in cast iron since I was a kid. Even then I prefered cast iron over other types of cookware for pancakes.

The wifeys grandmother gave us a HEAVY cast iron skillet and lid years ago. It is 10-12 inches and heavy. It should have two handles but it only has one. We kept it in the barn for a few years and then I needed it. Clean up some rust off of it. Reseasoned it a bit though it was in good shape and we have been using it for years now. I wonder how old it is..... :D

Amazon had a sale a few months back on Lodge cast iron dutch ovens for $30 including shipping. How they made money on that deal I do not have a clue. I bought it to make No Kneed bread but I used it on Sunday as a deep fryer for my version of pepper poppers and fried green tomatoes. It worked great. The cast iron really moderated the heat of the oil.

I use the cast iron as well as a cast aluminum pressure cooker on a smooth top electric burner all of the time with no problems. We don't have propane in the house. And never will if I can help it. :D

Though next time I can veggies I will use the propane burner on our seven in one cooker OUTSIDE. :D At least we will keep the heat out of the house.

Later,
Dan
