Lentil soup tonight:
1 Tbsp olive oil
1 medium onion, chopped
2 garlic cloves, minced
1 tsp ground coriander
1 1/2 tsp cayenne pepper
1 tsp chili powder, optional
1/2 tsp ground ginger
2 tsp ground cumin
1/2 tsp ground turmeric
1 Tbsp tomato paste
1 large carrot, peeled and diced
2 stalks celery
1 1/2 cups brown or green lentils, rinsed and drained (300g)
1 15 oz can diced tomatoes, (400g)
6 cups chicken broth, (1.5l)
1 pound boneless skinless chicken breasts, (450g)
salt and pepper
I will substitute a quart of my frozen tomatoes for the canned tomatoes and some of my previously cooked chicken for the chicken breast. :licking:
