I'm looking at a used 11HP pressure washer this afternoon. I'm not sure of the brand of the unit, but it has an 11 HP B&S engine on it.

Aside from just trying it out, and the usual things like looking at the engine oil, checking for leaks of engine oil, or water from the pump, what else should I check for?

There is a pressure test gage you can plug in to test pressure. About the max pressure you will see is when the relief cuts in like when the trigger is off. That is not you usable pressure, it will be lower. You can leave the gage plugged in, and plug the hose in after the gage, and you can monitor the pressure. Check for leaks on the engine, see if the pump has oil at the correct level. Oil in the pump should normally be 30 W. Should have about 5 tips. Should have a device to suck in bleach or cleaner. It can also be left in place. Always have water running through the pump before starting.
