Tree stump value

We cut some walnut down last winter and someone was mentioning that walnut stumps have value for those that carve wood. Has anyone ever heard of this and if so, what is the prper way to dig them out with a small backhoe?

I don't know the value of the stumps. Most of the really good gunstock wood actually comes from the roots. Apparently the root wood is very stable as well as pretty.
