Funny thing.........I misread the recipe and thought the recipe was referring to oven racks, when it was referring to a pan with a rack. So I had to make a rack for my disposable pan. I cut the handles off of a fish grilling rack and laid it out over the apples, leeks, and carrots! I also didn't buy any cooking string, so I had to use aircraft stainless safety wire to hold the legs together!

The turkey came out great. Very, very moist. I'm not much of a spice user in cooking, but I went ahead with the Sage, Rosemary, Thyme, and Parsley with the pureed bacon and butter for the rub baste. Next time I'm gonna cut back on these spices. Also, instead of onion and leets, I try fresh pineapple under the turkey rack.
