My Wife, and I just finished the first of two batches of Salsa. We are also planning on doing two batches of Spaghetti Sauce. We love to can stuff. We use it all year long, and when summer rolls around we are always about out of last year's supply. Is there anyone else, that really enjoys canning in this forum? Also anyone ever make Ketchup or got a good recipe for Hot Spaghetti Sauce? This is almost as much fun as my seat time on my tractor. /w3tcompact/icons/smile.gif Kent

We made salsa the first 2 years we were here. The weather kept me from planting the tomatoes this years, so we gave it up till next year. We wanted to have enough for the whole winter but the neighbors and family wiped us out it was so good. And my wife never knew what a canning jar was until we moved here /w3tcompact/icons/smile.gif

Kent, my wife cans salsa, tomatoes and sweet and dill pickles. Also makes jams and jellies. When making a pot of soup or chili she just dumps in a quart of canned tomatoes.

Try this one for a unique salsa, not for canning - all fresh stuff:

3 Peppers Red, Green, Yellow chopped
3-5 ears corn cooked and cut off or 1 Pkg frozen
Fresh cilantro 15-20 stems& leaves chopped
Fresh dill and basil chopped
2 cans black beans drained of liquids (4 cups)
3-4 scallions chopped
3-4 tomatoes diced
Celery chopped
Fresh chopped Garlic, salt and pepper, tabasco etc to taste..

serve cold - with colder beverages

This makes a good afternoon salsa that will go fast. Made it twice so far and it's the first thing gone.

As you note I'm no cook but do it by taste and texture.

Carl_NH, Boy does that sound good. We may try that this weekend. I've got pickles to can, and more tomatoes to make in to Spaghetti Sauce. A couple of years ago I had some Hot Spaghetti Sauce. I was wondering if you just add hot peppers to the mixture or is there something else you must do? Thanks again to all. Kent

Yes we love to can stuff from our garden. Lots of zuchinni this year . . . goes great with tomatoes in all sorts of pastas and soups.

No tomatoes this year though, the deer ate them all /w3tcompact/icons/frown.gif

We make a cold salsa, which is pretty simple, cilantro, green peppers, onions, and of course tomatoes. Everything but the tomatoes come from the garden. Neither my wife nor I like hot spices, so the onion is the hottest thing in it. Sure is good with all fresh veggies, especially the fresh tomatoes. I still haven't been able to get the timing right though. The first batch of cilantro went to waste because the tomatoes weren't ripe yet.

I would like to try to can some salsa though. I assume everything has to be cooked first right? Any recipes I could try would be appreciated. If it has hot stuff in it, I'll just leave those items out. Thanks.

Guys, Sorry to hear about the tomatoes. I know a lot of people around here, had their tomatoes Dry-Rot. I was luck, and also fortunate to have a water pump with a creek nearby.

As far as recipes for Salsa, We put in whatever we want too, and cheat a bit by using Mrs Wage's Salsa seasoning./w3tcompact/icons/blush.gif Always comes out good. We put tomatoes, onions, Biker Billy Peppers, Sorento Peppers, and Vinegar in ours. The peppers are hot./w3tcompact/icons/shocked.gif We cooked it for about an hour, and half to get it to the right texture. Then we pour it in to the jars, and sealed them. We made 16 half pints, and 16 pints this batch. About 12 quarts if you figure it out. /w3tcompact/icons/smile.gif Kent

It didn't come up this year because the lousy weather and the deer combined to pretty much ruin my garden. However, at one point I thought I was gonna have many more peppers than I could use right away. I was thinking I might freeze the chopped up bell peppers in water, because I read some place that you could thaw them and they were pretty close to fresh tasting. I wonder if that wouldn't maybe work for some of the fresh herbs too, like cilantro and dill.

We had plenty of cabbage this year, and my wife did make some chow chow, though we just barely had enough hot peppers to put in when the cabbage came in.

Too bad the deer don't eat all the Zuchinni's....

There are tons of recipes on the internet... Wife looks at allrecipes.com when she want's to try something new on me..... Lots of other locations as well....
