I saw this on a Duke Energy utility truck that had a large boom on the bed. Any idea what the hoses connected to the hubs are for?

Tire inflation system. You can control the tire pressure from the cab pretty much.

tire inflation, allows the operator to increase or decrease tire pressure on the fly

Yes, as the others said - changing the tyre pressure (on the fly, maybe?)

I see a lot of log trucks and trailers with these on them around my area. I assume that they drop the pressure on the muddy logging tracks and then put it back up for the sealed road trip to the mill.

Yes, common to deflate when going off road. Nice to be able to do remotely if this is the set up.

It seems like the hoses would get ripped off in the brush. I guess not.

They are also for on-road safety. Low tire pressure on a truck combined with a heavy load can result in a blowout and a tragedy for the driver and nearby motorists.
If the tire can be topped off when pressure drops, it increases safety. Newer cars and now trucks have low tire pressure warning lights, even an audible alert.

Does this mean there's no (Schrader) valve in the tire stem?
That a leak anywhere in the system flattens all the tires?
If so, you better not snag a hose on a branch.

Common around here on the 3WD and 4WD fertilizer spreaders, drop the pressure when they are spreading in the paddocks.
Most are based on the Mercedes Unimog.
