I LOVE my kimchi kraut on hot dogs! Along with pickles, onions and Dijon mustard. SLURP !

Bought a 5th air lock crock. Not like my beloved Harsch Crocks (went out of business). But it should work.

Harsch look alike.... I tend to use an open top crock with a close fitting ceramic dinner plate with a stone weight on top, covered with a plastic trash bag to reduce the oxygen and keep the Kalm under control. Have have a couple large (heavy) ones. When full they need to be sitting on moving dollies so I can move them around. Next year is cabbage year here. Still consuming canned kraut from 2 years ago.

Being the good hill billy I am, only thing green 'maters' get here is sliced and breaded and deep fried until crisp. Interesting arrangement with the water locks. Where did you get them?
