Pardon the dumb question but…
New Holland WM 70, two rear remotes that are manually operated, A, B and float.
Like the lift valve on a loader.
To run a log splitter i‘d want on/off that latches. (I could prop a current valve open)
What’s that type of valve called and can I replace one of my current valves with it?
Bonus points, is there a remote valve that can do both modes?

A valve with detents will lock in position like float does. Some companies make detents that release at a preset pressure but that would defeat using it to run the log splitter.

Not sure on replacing current valve.
