Most manufactures use a stop that the door closes against.
A bulb style seal with vhb adhesive.

Check out conveyor belting to cover the gap. (Hay baler belting may work as well if you can get it in rolls.)

I thought about conveyer belts but most I’ve ever seen are either way to wide or too thick.
Funny thing, my buddy just recommended baler belts. I don’t know why I didn’t think of them.
