All this talk of good breakfasts reminds me of perhaps the best one I've found on the road and that was the Outrageous Omelette (Bacon, sausage, ham, saut馥d mushrooms, red onion and bell pepper folded into an omelette stuffed with cheddar jack cheese) at the Flying J on I-30 just east of Texarkana. Of course with a little toast and hash brown potatoes, you definitely have to be hungry to eat it all.

And J J, do you cook the tomato in with the potatoes and onion? We do like potatoes cooked with onion, and sometimes then have sliced tomato along with breakfast, but the tomato isn't cooked.

Grits may be a poplar food in the south, but for the poor that only had grits to eat, it was a health problem. The processed grits was striped of all its nutrients, particular the lack of B-complex vitamins causing Prolegra. Each of the group of vitamins that make up the B-complex group has its own symptoms causing mental and physical problems. Now processed foods like White Bread and cereals are fortified to replace what was removed.

Man you guys are making me hungry. Speaking of omelets, if you ever happen to go to a Bob Evans, try the farmer's market. I had it a few times when traveling back East.

A hearty blend of Bob Evansョ Sausage, smoked ham and bacon is cooked into a 3-egg omelet with onions and fresh baby spinach. Then it's stuffed with Monterey-Jack cheese and topped with hollandaise sauce, shredded cheddar cheese and scallions

Cant say if I ever had a poached egg?? Had 'em cooked in the middle of toast at granny's allot, with gravy, that was pretty good

"poached" a few melons though when I was a kid!

Took the wife to a fancy resort down at Lake of the Ozarks for our anniversary this year. The real reason we stayed at the resort was to go to the restaurant for some decent seafood. So, the morning we were leaving, we stopped at iHop for brunch. They were running an all you can eat pancakes with some of their breakfasts. I came close to killing myself with sausage, eggs and hash browns plus two helpings of pancakes....I can remember a time I could have bankrupted the place, but no more. That night we ate at the resort restaurant....big $$$$....they didn't even have the lobster skewers DW wanted as an appetizer. My sea bass was pretty tasteless and her scallops were over seasoned. Then the next morning we had breakfast at another restaurant at the resort. Mine was a so-so omelette. Bottom line: best meal we had for our anniversary was at iHop. But then I absolutely love breakfast. I almost never get big breakfasts at home because DW is a cardiac nurse. I agree that hash browns are a necessary part of a good breakfast. I can live without restaurant grits, though I'll take them if they are free. My own grits are so doctored up they serve as a stand alone breakfast.

I duuno....looks like tapioca pudding to me. I think of grits as part of a continuum between gruel and cornbread. As I said, put enough stuff in it and it tastes good. Ever have conch salad? After the dressing is gone you're left with something akin to chewing gum, but with more to chew.

I stopped off at Burger King this morning to try the Ultimate Breakfast, Scrambled eggs, Hash Browns, 3 pancakes w/butter and syrup, and a choice of sausage, ham or bacon. 1,300+ calories. I need to gain some weight, but I will not eat there every day, maybe two times a week.

I found the articles about pellagra. The main cause of the condition is the lack of the B vitamin Niacin and protein as a result of a poor diet. Grits is not the only cause, poor diets in general, being poor during the depression, living on what could be afforded. As a result of knowing the cause, food, cereal grain food is fortified with vitamins to restore what was lost by processing.

As a kid in the 1950's in western Mass, when we had poached eggs on toast we used a special pan. Usually us kids made them as my mother did some thing else. My wife from near Boston had only had poached eggs at her grandmothers - but rarely. We used a pan something like this one - but round bottom cups.

We ate soft boiled eggs out of an egg cup and for a while tried sucking eggs - prick two holes in an egg either end - one to let air in and the other to suck out the yolk. Of course with 100 chickens running around on the farm you eat alot of eggs! She did a tortilla with potato and eggs cooked like an omlette + spice.

Now our 10 barred rocks keep my wife and + son in eggs - taste so much better than a store egg!
