Also called mayocoba beans, peruana beans, canary beans.

They are a side dish in a Peruvian restaurant we go to a lot. The beans are yellow, and they taste different from pinto beans.

Very simple to make:

1 lb beans
1 med onion, chopped
2 garlic cloves, chopped
1 serrano or jalapeno chile, whole
salt

Just put everything in a pot and cook until the beans are soft, several hours.

Some recipes call for adding lard or olive oil, and lots more seasonings. But I like the simple recipe best.

I get them at a local Mexican grocery, they are also available online.

Never heard of them, but they sound good. We have grown fond of Anasazi beans, which we find to be much better than regular pintos.

Yes I remember you mentioned the Anasazi beans a while ago. I got some and they are good. Usually have a package of them in the pantry.
