We have a Japanese visiting scientist at work. She is eager to try all things American. I mentioned buffalo burgers and she was eager to try one.

I had her and some other colleagues over bor a cookout. We had alligator tail, ostrich steaks and buffalo burgers and sausage. I got this at The Healthy Buffalo of NH, buffalo meats, bison meats, ostrich meats, wild boar meats, alligator meats, venison, and more!. They sell lots of exotic meats.

The meal was a big hit. I marinated the alligator tail in a homemade sauce and cooked it on bamboo skewers. Now I know it has been said before but this "tastes just like chicken"

The buffalo burgers were tasty - by time you added all the fixings to the bun it was just like eating a regular burger. The buffalo italian sausage was very good. All of the taste but none of the fat and grease.

The ostrich met with mixed reviews. It is a very red meat and even the ones I cooked to well done were red. This was offputting to those who prefer their steaks well done. Me - I enjoy a good rare steak so I thought the ostrich was delicious.

Miyuki, the visiting scientist, ate it all and can't wait to tell her freinds back home.

I'd like to try the ostrich since I've never even seen any of that meat. I've had alligator and bison and liked both just fine, although I wouldn't pay premium prices for them.

I have eaten many, many species of the edible animal kingdom that when properly prepared I have truly enjoyed :D (sometimes I do not ask what I am eating :eek: until I have been done eating it); but I still have problems with non-pickled beets :eek: and garbanzo-orange loaf :eek: :eek: Jay

I don't even know what garbanzo-orange loaf is, but non-pickled beets??? I love hot buttered beets with a light sprinkling of black pepper.

I had a client who had a family member come to visit from Japan. It was her first time to the United States and she really wanted to shoot a gun. They all came out to my place and I let them all shoot a variety of rifles, pistons and shotguns. The pistols were a HUGE hit with her!!!

I'd heard that they have very restrictive gun laws and have seen tour busses at the rifle range with Japanese tourists who were like little kids at Christmas.

If she's still around, see if she wants to do some shooting. Every time I see that client, he tells me that was the highlight of her trip here.

After she shoots at Eddies house for a while, tell her to come a little further east to southern Louisiana and try some of the regular Cajun dishes. After she finishes the crawfish, roasted Nutria, bbq shrimp, LA oysters fixed 99 different ways, shrimp & white beans, red beans & rice with andouille sausage, jambalaya, seafood gumbo and alligator sauce piquant, she will really have something to tell the folks back home.:D :):D

Nutria is a lot like a rabbit. Not bad meat.

There was an ostrich craze around here about 15 years ago. It was predicted that ostrich meat and ostrich egss were going to be a big hit. I knew some very smart, very rational, very cautious people buy into that racket. they bought land, built fences, bought ostrich breeding stock....the whole nine yards. I never saw anything so STUPID in my whole life. These same folks tried to get me to buy into it. I got a sort of a "Amway' vibe from them, if you know what I mean. Of course I declined and of course they all lost their shirts.

Don't get me wrong, I'm not saying ostrich burgers aren't tastey or that a 6 pound fried egg wouldn't be fabulous. I'm just saying there was no way on earth that there was ever or ever will be anything more than a novelty market for ostrich meat in the US.
