Not looking to restore or anything but it's something I can use in my gardens.
I have all old stuff, BTW

1949 Farmall Cub and a 1980 Stihl FS80 trimmer.

That Stihl is hard to find parts for!

But, there's nothing out there I like near as much

Oh, and I have a 1970s Homelite chain saw, too.

Go to the lumber yard and get yourself some copper flashing. Works great, my wisc engine has been running with one for 4 or 5 years. It's in my bolens that I run everyday to and from my shop.

It's interesting that you quench to anneal most metals besides steel.

Many of the people I've asked around here said thickness could be a problem.
Do you know if that is correct?

A gasket thinner than stock will increase the compression ratio and possibly cause a valve interference issue. If enough of the original gasket remains to measure thickness you can try to match it. Check for valve interference turning the engine over by hand. If you lay the head on without a gasket and it doesn't touch you're home free in that regard.
