Can I use New Holland hydraulic fuild in my Kubota 2710 3pt hitch?
Or would I be better off using gear oil 80w 90w?

Are you kidding? The 3-point hitch uses a common oil reservoir with the hydrostatic transmission, power steering, and other hydraulics (front end loader if you have such). You sure don't want to put anything but hydraulic fluid in there. Kubota recommends UDT or Super UDT, but naturally there are others that are acceptable.

Yikes...80w 90w gear oil... may as well pour a honey and molasses solution in there. Hydo fluid is thin, Bobcat even says automatic transmission fluid can be used in "emergency" situations as a substitute, but also says to drain and flush and add specified fluid as soon as possible.
