I recently bought a used 2005 New Holland TC30 with 77 hours. I knew this was a economy tractor, but now I am wondering if I should have waited and bought a 30 Hp Boomer but from what I can tell most of the differences are cosmetic. The only features I think I would want is the deluxe 3 point hitch and the foldable ROPS on the Boomer. What is the opinon of others between these tractors. Is there something I am missing here that would justify swapping tractors?

Not for me. But if you want to spend a bunch of cash for those two features, it's your choice. As the TC30 is available with gear drive or hydrostatic, I 'd say if you have the transmission you want, you could buy the deluxe draft links out of parts, live with the rigid ROPS and be many dollars ahead of trading.
