New camp chef woodwind smoker

Got my new smoker in as the title shows! The woodwind by camp chief. First thing I am gonna do is poor mans burnt ends. Using a 2 to 1 mix of competition blend pellets and cherry pellets.

I will update as it goes!

Model is a “ woodwind”

I have put a run on the cut and letting it set for 24 hours or so.

Put it on high smoke (220) for 2.5 hours... then bumped it to 275. Once it hit 165 I pulled it and wrapped it in foil. No waiting for it to hit 195. I will then pull it, let it rest for 15- 20 min then cut into 3/4” cubes and go back on for about an hour.
