119 hard hrs on her. Trouble free until today/yesterday.

Turn the key full lights and a click from the engine. To me it doesn't exactly sound like a solenoid but probably is. Turn the key another position and should turn over engine, but nothing, nada, zilch.

Yesterday this happened once, but then I tried it again and it started up. Today, not even able to turn over once.

Yesterday I had the pedal cotter pin slip out, so I had to pull the floor which required me to to pull the shroud which has the key and cruise control on it. I disconnected both to get it out of the way of me removing the floor. Reconnected it and it seems to be a new problem. I did check both fuses that are found under there and both were good.

Any advice or insight is much appreciated. :)

Did you have any starting issues before removing everything?

Also, if you mean the Roll Pin for the pedals, I just had mine back out too, but put it back it without all that disassembly.

No, never any issues before that.

Unfortunately, the way the tractor was parked It seemed to be the easiest way to re-install the pin. Would have been almost impossible to tap the pin in with a hammer without removing the floor.

Check all safety switches, including the seat switch, clutch (if equipped), neutral, etc.
Find the ground connection to the frame and make sure its got a good connection.

Make sure the PTO switch is off - might be that click you are hearing

I'd suggest you go back through everything. Double check all the connectors you dealt with. Make sure you didn't pinch a wire somewhere.

I've taken it apart and put it back together repeating what I did 3-4 times, but still not even a sniff at turning over.

Not sure if I understand where the PTO switch is?

The PTO switch is what activates the rear or mid output shafts. On my Xj, it was a little finicky at first. On mine it is yellow.
