Mongolian Barbecue

Use to have it at NAS Guam, a weekly club event. Never had it in the Philippines but it was available. Nice little spot in downtown Alameda Ca. that did a good job at a low price.

There is a really good one in Dearborn, MI though I can't remember the name. The BD's chain is fun and good but not quite as authentic. Makes me hungry!

George, our old friends said they learned to do the Mongolian BBQ while he was stationed in the Phillipines. He said the original way was that they cooked the ingredients on their shields over an open fire. Of course in Dallas, he had a fair sized charcoal grill, he took the grate off and had a large round flat sheet of steel (1/4" to 3/8" thick perhaps) that he put on in the grate's place, making a pretty large flat griddle. I remember the chicken was cooked, deboned and chopped up, the beef and pork were still raw, sliced in small pieces, there were alfalfa sprouts, a couple of kinds of shredded cabbage, shredded carrot, maybe some bell pepper and onions, then several bowls of liquid (garlic water, soy sauce, ginger water, and I don't remember what all). You filled your bowl, took it to him, he dumped it on the very hot griddle, stirred and turned it with a large metal spatula, and scraped it off into your bowl again. It cooked pretty fast on that hot griddle

That is how it works at the 'Mongolian Grill' places here. Nothing fancy but it is pretty fast. You fill your bowl with veggies, noodles and sauces then give it to the guy. The grill is gas, about 6' across and hot. They dump it on there and give it a couple laps around the grill and it's done. They use what looks to be about 3 foot bamboo sticks to move the food around. Only downside is they can cook several peoples food at the same time and only rinse down the grill now and then... if the guy in front of you likes it spicy, well, your gonna get some spice. One of the guys that used to work for me hated baby corn and it seemed every time we went there he would get a piece of baby corn from someone's food going around the grill

It is pretty inexpensive and the college kids love it. They get the super-mondo bowl, take most of it home and eat it all week ;)

The trouble with the Mongolian BBQ places in this area is that they're all in Chinese "pitch 'till you win" Buffet restaurants that have so much other delicious food already cooked that I never get to the Mongolian.
