I've only have 41K on our 2019 with DEF and "0" engine or emission issues, only issues so far was AC started blowing warm early on and it was an O-ring replaced under warranty (They said it was assembled wrong) and then Death Wobble at 30K, also addressed under warranty.50,000 miles on my DEF truck. Other than a DEF fuel gauge that quit, no problems.
I think the initial DEF systems were guinea pig systems. They seem to have improved.
But it is more likely they will break because of the additional parts & electronics.

You want “new”, you get all the new equipment-the good and the bad.
If 20,000 GCWR is your sweet spot, I’d be looking at a RAM 3500 standard output 6.7 cab & chassis.
Most comfortable, quiet, and easy driving truck I've ever owned or been in. Tows all trailers with ease.
I think both Ford and Ram have 5 or 7 yr/100K mile emission warranties so DEF problems would be covered for a while anyway.
