I bought a brand new CC LT1045. Going from a old Bolens 42" it feels like heaven.

BUT, I'd like to be able to mow in reverse without going through the juvenile "apply break, turn key, push blah blah blah" process every time.

Question: is there a way to disable the reverse/safety feature?

I don't know about the new models, but I'll bet it's pretty simple. In 1995, I bought a new Cub Cadet and it was a simple matter of unplugging one wire connection.

On my 3235 it was a simple matter of just bending the switch arm, located under the reverse pedal, so that the pedal didn't contact it.

Read the manual again. When prearing to mow, you only need to set the ign. switch and activate the RIO feature once to allow repetitive forward/backward movements while keeping the mower deck operational. Only shutting off the electric PTO or re-positioning the ign switch will make you need to reset the RIO feature.
I always set my RIO up just before starting to mow, engage the electric clutch and leave it that way until I am thru. Much easier on the electric clutch... and me.

Although rcbe was correct: one simply has to enable reverse mowing at the beginning of the task.

The CC must be different from my Deere as I had to engage the blasted Lawyer Switch every time I wanted to mow in reverse.
