I've made this for late breakfast, the morning after Christmas, for years now. In one form or another. This recipe is for 2-4 people, just use more leftovers to make it bigger.
Picadillo
Heat 1 tablespoon olive oil in large frying pan.
Add:
1/2 tsp cumin
1/2 small onion finely chopped
2 cloves garlic finely chopped
1 serrano chile, no seeds, finely chopped
Cook for a short while.
Add:
1/2 leftover baked potato, diced
1/2 lb leftover turkey or ham, shredded. Can also use ground beef, ground pork etc
1/2 cup leftover broccoli or cauliflower, chopped
1 medium fresh tomato, chopped
Cook for a while.
Add:
1 tsp salt
1 tsp smoked paprika
1 tsp ancho chile powder
Cook for a short time.
Take off heat.
Add:
1/2 cup chopped green onions, both green and white parts
1/2 cup chopped cilantro
Good with eggs, toast, sour cream, jalapeno jelly, etc.
