does your center disc NOT unbolt from your rims? My 3710 HST rims come apart like that AND the rims also have two lug tangs for each lug position. Thus at least 6 potential width adjustment choices.
If all you are going to do is spin the discs around (convex to concave), you should not need to remove both tires at once. I cannot see disc/rim lugs in your picture, so perhaps that is what I am missing. If you don't have them, then yes, the only width adjustment you have is to reverse the discs
