As far as oil, any good quality rated for use in diesel engines will be fine. I normally use 10W-30, but I don't have any preference for a given brand. I guess Quaker State would be my most frequently used brand.
As far as maintenance...try your local Deere dealer (since the place you bought the 755 from didn't have the manual?) to see if they can order you a manual. I know you can buy one at your local Tractor Supply, but it'll be somewhat generic (not a Deere manual).
However, start looking around your tractor for grease (zerk) fittings. You should have one at the front wheels pivot points, the front axle pivot (for steering). The axle U-joints...brake pedal pivots... Reckon you should see 6 or 8 zerk fittings, not including the front end loader (if you've got one). If you've a loader, any place that can pivot or move will have a zerk fitting to lubricate. Per the manual, my 670 should be greased every 10 hours. I use a general purpose high pressure grease.
That 755 is a solid machine. I'm sure you'll enjoy working with it.
