Hydraulic question

I don't have 3rd function on my tractor and not planning to install it. Thinking about small hydraulic unit to drive double acting 2x6 cylinder on bucket grapple. Specs for the unit:
12v dc
motor rated 1.6 - 3 kwt, 3 qt oil tank
Max pressure 3200 psi A port and 1500 psi B port
Would this work?

It would work but it's not very practical. Even though you won't be running that electric motor all the time, it will still pull a considerable amount of power from the battery when running to open or close the grapple.

If this is for the Kubota B7800 you have listed on the profile, that tractor doesn't even have an alternator. It has a small generator which is barely enough to charge the battery and power a couple low power lights.

I really think you're better of using a diverter valve. It's probably cheaper than the hydraulic power unit + hoses + wires, etc. and you can just run it without any issues.

Press a button, it diverts the flow from the curl cylinders to the grapple. Release the button and you can use the curl cylinders again.

It is possible but not very practical. I built my diverter valve using a solenoid selector valve and fittings to make the manifold. Cost less than $200 as I recall for all of it but that was in '19 BB and CI. Before Biden and Covid Insanity.
