You can pull just about any size you want, I think foreman Etexas pulls a batwing as well as a fixed 12'. From our experience, your dealer is pretty close to what I would recommend 3PH and pull type. We used a 10' light duty Woods 121 on 3PH for a lot of years, but when we went to the Woods DS1260, which is a lot heavier, we went with a pull type. I haven't seen Builder post recently, but he mows commercially with an M7040, so you might pull up some of his old threads; lots of M7040 owners here with good advice.

We own an M8540 which is pretty close to the M7040, but I'm sure there are some differences in weight etc., but not a great deal I don't think.

I've been pulling a 15 batwing with my M7040. If I am mowing brush as tall as the cab, I run in low 2, otherwise I mow in low 3 or low 4 depending on how tall and thick the grass is.

I am pretty sure the mower weighs 5500#, though I have also seen reference to 5900#. Mine has foam filled tires and chain curtains, so it might be on the heavier end.

If I can cut with a 15', I think an 8 or 10' will be a breeze...
