How did the "Nachos for 500" turn out?

This post is the reason there will be no Nachos at the fundraiser. After reading this I read the label when I went to Sam's and OMG, the cheese sauce is made with #1 water and #2 ingredient partially hydrogenated oil - trans fat. This is banned in several cities and is listed as not safe by the FDA. Basically a heart attack in a can. I think New York City must have shipped all this crap to Texas after they made it illegal.
Let them eat cake.

When my mom was in the rehab getting over her {light} stroke, I heard the nurse talking to the lady in the next bed over. He was telling her that any food products that congeals at room temperature will do the same in the blood vessels in your brain {as well as the rest of your body}. I have always tried to read labels, but I'm paying more attention to them than ever. A bad stroke scares me more than anything else.

I make a good cheese sauce but can't compete with price against the watered down fat taste people expect. The VFD decided that $2.00 was the max that could be charged per order.
The main ingredients in my sauce are nutritional yeast, almond milk and sweet potato. I would not break even at 2 bucks.

Speaking of congealing food, I asked Sharon if she thinks it's a good idea to eat something like Ranch dressing if the empty jar can't be rinsed out with hot water? Pretty scary. We've been using more balsamic vinegar and oil dressings. :D

We are fortunate to have a variety of balsamics available locally: Hawaii Balsamics one tast and You will Say WOW . I get ours at the farmers market.

Have a row of about 10 different ones on hand. Normally, we'll dice up some tomatoes, add the balsamic, then ladle over our salad.

We'll see how the job goes. It's contract to hire for the first 90 days (not an uncommon thing nowadays and I prefer that) and gives both parties a change to evaluate each other before a permanent hire.

Yeah, no rain until the weekend...at least we won't have to mow again for a few days!
