There's some really good meat in those oxtails, plus the cartilage makes for some really thick soup. I have 2-3 of them in my freezer right now as well as some frozen oxtail soup that I made a few months ago. It's one of my favorites.I raise my own beef and could never see the point of oxtail. Pretty much all bone.
