I raise my own beef and could never see the point of oxtail. Pretty much all bone.
There's some really good meat in those oxtails, plus the cartilage makes for some really thick soup. I have 2-3 of them in my freezer right now as well as some frozen oxtail soup that I made a few months ago. It's one of my favorites.

My wife make those ham and cheese sliders with country ham, some kind of butter sauce with onion and poppy seed and extra sharp cheddar. Love this things!!!!

West Indian Oxtail curry or Goat Roti are favorites I can't get around here.
My friends who moved to Florida used to make this, great stuff, just watch the goat bones !

Got a friend who I graduated High School with. He moved to an area in East Tennessee. From what I understand - not far from RockyTop. He and I use to raid the neighbors LARGE corn patch and eat it raw. He says - gets most of his corn from a Mason jar now.

We did the same in MA with Potatoes, the neighbor to the school house planted red (new) potatoes.
We used to wash them up in the school for a snack.
Luckily never got sick.

Growing up, we ate a lot of stuffed pig stomach. Clean it out really good and then stuff it with potatoes, sausage, spareribs, carrots, and whatever else you had lying around. Was and will always be one of my favorite meals. Grandma makes it about twice a year for me these days.

Lutefisk. It's a Scandinavian delicacy. I'm going to describe the smell of cooking this "delicacy" as politely as possible. Those who have been to war have, most likely, smelled what Lutefisk smells like. When my Mom would cook it up - the entire neighborhood was agast. As a child - I ate it but, God knows, I cried. Now - I like it very much.
