Do not remove the thermostat, it can cause the temp to RISE due to, too much water flow, not giving the the coolant sufficient time in the radiator to cool.
Also if a diesel, wouldn't be the first time a 3 cyl cracked a cylinder head.
 
I hear waxing the hood helps with overheating, it lets air flow over the hood easier.

I can’t help but make fun of it. I get it, people don’t read an entire thread. An update, the OP took temps with a IR gun, it wasn’t overheating. He figured out the problem since then.

What brand of wax works best? Any data on ceramic coatings?:unsure::unsure:
 
Just a thought, I had the same trouble with our 3000 and it turned out to be the bottom hose collapsing as the rev's increased thus stopping the flow of coolant. I found a suitable spring to fit inside the hose and it cured the problem, I think the replacement hoses are not made to the same strength as the originals.

You've got to warn us before letting loose with a zinger like this! I haven't laughed so hard in a long time... yet the helpful(?) suggestions still keep coming.
