Could someone explain wet and dry brakes? I assume dry are traditional shoe and drum but what are wet brakes? Which is better? Do all 20 series yanmars(2420.3220, etc) have wet brakes?

Mostly, wet brakes refers to oil imersed brakes. Sometimes you will see atv's and some heavy equipment with wet brakes.. or even wet clutches.

Is it better or just harder to work with? I've got wet brakes and dread the day I have to figure it all out. bw

'Better' is a subjective term. I believe most wet brake / clutch systems last longer before needing repairs / replacement parts.. but then is more difficult to work on. The dry system requires more periodic maintenance.. but is realitively easier to repair.

Situations vary machine to machine.. but that is probably a fair take on the situation.
